Hi, i`m not sure about fueling curves or timeing as most of the time they are part of the PCM (engine management module) programming, thats what tunners tweek to come up with different "maps" for cars.. but some i dont know for sure if its doable with forscan as i`m new here as well but i know a littlebit about car diagnostics.. :)

If your vehicle´s PCM software can be updated through CAN bus it might be possible. But FORScan does not support PCM software update at the moment. Maybe in future releases. But you have to do the tuning all by yourself - get the PCM software, modifiy it and update PCM with modified software when this feature becomes available.
One of the other Ford specific programs already supports PCM software update. I don´t remember if it was Elmconfig or FoCCCus.

I don´t know what data is stored in the PCM. The VIN ist stored in the PCM and i guess some additional configuration data, injector C2I codes, PATS codes and so on.
Fuel tables are usually as far as i have heared part of the software. But this also may differ on different models. I didn´t investigate much in information of other vehicles just on the model i own. ;)
